Chef Joshua Hernandez rolls his dough daily and allows it to rise slowly over three days with natural sourdough starter. We use the finest Italian flour and tomatoes and have sourced Florida made mozzarella for maximum flavor and texture. We have secured a second wood fired oven from the esteemed Acunto family in Naples, Italy, to ensure the pizza we produce at Armature Works will be every bit as good.
